– 3/4 cup unsalted butter, chilled and cubed
– 4-6 tablespoons ice water
– 6 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
– 3/4 cup granulated sugar
– 2 tablespoons all-purpose flour
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon ground cloves
– 1 tablespoon lemon juice
– 1 egg (for egg wash)
– 1 tablespoon coarse sugar (optional, for topping)
Instructions
1. Prepare the Pie Dough : In a large bowl, mix 2 cups flour and 1/2 teaspoon salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Divide into two discs, wrap, and refrigerate for 1 hour.
2. Prepare the Filling : In another bowl, combine apple slices, granulated sugar, 2 tablespoons flour, cinnamon, nutmeg, cloves, and lemon juice. Toss to coat evenly.
3. Assemble the Pie : Preheat the oven to 375°F (190°C). Roll out one dough disc on a floured surface to fit a 9-inch pie pan. Press into the pan and trim excess. Fill with the apple mixture.
