Ingredients

– 1 ½ cups graham cracker crumbs  

– ¼ cup granulated sugar  

– 6 tablespoons unsalted butter, melted  

– 1 can (14 ounces) sweetened condensed milk  

– 4 large egg yolks  

– ½ cup freshly squeezed key lime juice  

– 1 teaspoon key lime zest  

– ½ teaspoon vanilla extract  

– 1 cup heavy whipping cream  

– 2 tablespoons powdered sugar  

– ½ teaspoon vanilla extract (for whipped cream)  

– Key lime slices, for garnish  


Instructions

1. preheat the oven to 350°f (175°c). grease a 9-inch pie pan.  

2. make the crust: in a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. press the mixture firmly into the bottom and up the sides of the pie pan.  

3. bake the crust for 10 minutes, then remove and let it cool slightly.  

4. prepare the filling: in a mixing bowl, whisk together sweetened condensed milk, egg yolks, key lime juice, key lime zest, and vanilla extract until smooth.  

5. pour the filling into the pre-baked crust and smooth the top.  

6. bake for 15 minutes, or until the center is set but still slightly jiggly.  

7. cool and chill: let the pie cool to room temperature, then refrigerate for at least 3 hours (or overnight) to set.  

8. make the whipped topping: beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.  

9. garnish and serve: spread or pipe the whipped cream on top of the chilled pie and garnish with key lime slices. slice and enjoy!
