Ingredients
– 1 ½ cups graham cracker crumbs
– ½ cup unsalted butter, melted
– 2 tablespoons granulated sugar
– 16 ounces cream cheese, softened
– ½ cup granulated sugar
– 1 teaspoon vanilla extract
– 2 large eggs
– ½ cup key lime juice (freshly squeezed preferred)
– Zest of 2 key limes
– Whipped cream and lime slices for garnish (optional)
Instructions
1. Preheat oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
2. In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons of sugar until combined. Press the mixture firmly into the prepared pan to form an even crust. Bake for 10 minutes, then set aside to cool.
3. In a large mixing bowl, beat softened cream cheese and ½ cup of sugar until smooth. Add vanilla extract and mix well.
4. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next.
5. Stir in key lime juice and lime zest until evenly mixed. Pour the cream cheese mixture over the cooled crust and spread evenly.
6. Bake for 25-30 minutes or until the edges are set and the center is slightly jiggly. Let cool completely in the pan, then refrigerate for at least 3 hours or overnight.
7. Once chilled, lift the bars out of the pan using the parchment paper. Cut into squares, garnish with whipped cream and lime slices, and serve.
