Ingredients
– 1 cup all-purpose flour
– 1 tablespoon sugar
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1 cup buttermilk
– 1 large egg
– 2 tablespoons melted butter
– 1/2 cup cream cheese, softened
– 2 tablespoons powdered sugar
– 1 teaspoon vanilla extract
– 1/2 cup mixed berries (strawberries, blueberries, raspberries)
– Maple syrup (optional, for serving)
Instructions
1. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2. In another bowl, whisk buttermilk, egg, and melted butter until combined. Add the wet ingredients to the dry ingredients and stir until just combined; do not overmix.
3. Heat a nonstick skillet over medium heat. Lightly grease with butter or oil. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2 minutes. Flip and cook for another 1-2 minutes, until golden brown. Repeat with the remaining batter.
4. In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
5. Spread the cream cheese mixture over each pancake, add a handful of mixed berries, and roll them up tightly.
