Description

Ingredients

– 1 1/2 cups graham cracker crumbs (gluten-free if needed)  

– 1/3 cup granulated sugar  

– 6 tablespoons unsalted butter, melted  

– 4 large egg yolks  

– 1 can (14 ounces) sweetened condensed milk  

– 1/2 cup freshly squeezed Key lime juice  

– 1 tablespoon Key lime zest (optional)  

– Whipped cream, for topping  


Instructions

1. Prepare the Crust : 

   Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until evenly combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes, then let cool.  

2. Make the Filling :

   In a medium bowl, whisk the egg yolks until smooth. Add the sweetened condensed milk and whisk until fully combined. Gradually stir in the Key lime juice and zest, mixing until the filling thickens slightly.  

3. Assemble and Bake : 

   Pour the filling into the prepared crust and spread it evenly. Bake in the preheated oven for 15 minutes, or until the filling is set but still slightly jiggly in the center.  

4. Cool and Serve :  

   Let the pie cool to room temperature, then refrigerate for at least 3 hours, or until fully chilled. Top with whipped cream before serving for a creamy finish.
